Because that small amount of water is what makes the traditional design work.
Here’s the simple method:
1. Soften the butter slightly
It should be soft enough to pack, but not melted.
2. Press it firmly into the bell-shaped lid
Push out air pockets so the butter stays securely in place when inverted.
3. Add cold water to the base
Only a small amount is needed—the butter should meet the water when the lid is placed inside.
4. Turn the bell upside down into the base
The water creates a seal that helps protect the butter from outside air while keeping it soft and ready to spread.
5. Change the water every two to three days
Keep the crock in a cool place away from direct sunlight. During very hot Australian weather, use the refrigerator when needed.
It’s an old-fashioned solution to a very modern irritation, cold butter tearing holes in fresh toast and nobody likes that :)
