What Is a Butter Bell Crock?
A Butter Bell crock (also called a butter crock or French butter keeper) is a two-piece ceramic vessel that keeps butter fresh, soft and perfectly spreadable at room temperature — without refrigeration. The design has been used in French farmhouse kitchens for centuries, and once you try it, you'll wonder how you ever lived without one.
At The Eumundi Trading Co, our Butter Bell Kitchen Starter Pack is one of our best-loved farmhouse kitchen essentials — and for good reason.
How Does a Butter Bell Crock Work?
The clever design uses a water seal to protect butter from air, light, and bacteria — the three things that cause butter to go rancid. Here's the science in simple terms:
- The bell-shaped lid holds a pack of softened butter, inverted into the base.
- The base is filled with a small amount of cold water, which creates an airtight seal around the butter.
- The water barrier keeps oxygen out while allowing the butter to stay at a perfectly soft, spreadable consistency.
Step-by-Step: How to Use Your Butter Bell Crock
Step 1 — Soften Your Butter
Remove your butter from the fridge and allow it to soften at room temperature until it's pliable but not melted. This usually takes 30–60 minutes depending on your kitchen temperature.
Step 2 — Pack the Lid
Using a butter knife or small spatula, press the softened butter firmly into the bell-shaped lid, working out any air pockets as you go. Fill it to within about 1 cm of the rim. A 125g block of butter is the perfect amount.
Step 3 — Fill the Base With Cold Water
Fill the base (the cup portion) with about 2–3 cm of cold, fresh water. In summer or warmer kitchens, you can add a small ice cube to keep the water cool.
Step 4 — Invert and Seal
Press the butter-filled lid down into the base so the butter is submerged just below the waterline. The water creates the airtight seal that keeps your butter fresh.
Step 5 — Change the Water Every 2–3 Days
To keep your butter fresh and tasting its best, change the water every 2–3 days. Simply lift the lid, tip out the old water, rinse the base, refill with fresh cold water, and reseal.
How Long Does Butter Keep in a Butter Bell?
When maintained properly with fresh water changed every 2–3 days, butter in a Butter Bell crock will stay fresh for up to 30 days at room temperature (in kitchens under 24°C). In Australian summers, keep your crock in the coolest part of your kitchen or pop it into the fridge on very hot days.
Tips for Getting the Best Results
- Use salted butter — the salt acts as a natural preservative, extending freshness even further.
- Pack butter firmly — air pockets are the enemy. Press butter in snugly to avoid any gaps.
- Keep it out of direct sunlight — a shaded spot on your bench is ideal.
- In summer, use cooler water and change it every 1–2 days rather than every 3.
- Clean your crock regularly with warm soapy water to keep it hygienic and beautiful.
